This is based, from memory, on a recipe from a 1980’s M&S cookbook. It is a tasty combination of slow-cooked, then slightly caramelised onions, potato and a sausage of choice – we tend to use cooking chorizo.
Peel and slice two large or three medium onions and soften slowly in olive oil in a wide, low-sided casserole.
When the onions are soft and beginning to catch slightly, add chunks of peeled potatoes and cover. Cook until potatoes are soft. If the mixture caramelises on the bottom of the pan, so much the better. Add pieces of sausage and stir. Cook together for 10 minutes then finish in a hot (200C) oven to brown the top.
